Alison Hope Alkon is Professor of Sociology at University of the Pacific, where she writes and teaches about the ways that food intersects with various social issues including race, health, and the environment. She is co-editor, most recently, of A Recipe for Gentrification: Food, Power, and Resistance in the City (NYU Press, 2020).

Donica Belisle is Associate Professor of History at the University of Regina, situated on Treaty 4 lands with a presence in Treaty 6. She is writing a book on the global history of Canadian sugar.
