I must admit that I approached this book with excitement and a twinge of skepticism. As someone who is interested in sustainable agriculture both personally and professionally, I wondered how the authors would convince me that eight foods are the hope for a sustainable food future: algae, caribou, kale, millet, tuna, crickets, milk, and rice. What I found while reading the book was a well-researched journey into the food industry and the environmental impacts as well as some realistic challenges for implementing sustainability, despite technological advances. All this with some intriguing (and somewhat frightening) food snippets in between.
